Moroccan Spiced Couscous

The challenge: To cook all 115 recipes from the Thug Kitchen cookbook within a year.

72 recipes down, 43 recipes to go. 106 days left of challenge.

So I made the Moroccan Spiced Couscous as a side dish to dinner. It turned out great.

Those are some juicy ass oranges.

This is such a good recipe. It was fast to prepare and light and fluffy. The perfect side dish to something a bit heavier. And because it’s so quick and easy to make, it works really well as a packed lunch the next day for work or school. I cannot stress this part enough-for those of you leading busy/hectic/frantic/stressed out lives. This is a WIN-WIN situation. It literally comes together in a matter of minutes.

Fast to make, hassle free, and nutritious whole foods all rolled into one motherfuggin’ ball of easy deliciousness. As a parent this is now definitely a go-to recipe for me. One for the parent tool-box, you know what I’m saying?

The ‘how-to-parent-this-particular-child’ instruction manual may not have been airdropped in by the stork, but all the  little tools and “tricks of the trade” that you learn along the way are magic. Couscous lunches are one of these magical time-saving tools. No bread in the house? Grab your couscous by the grains and show it who’s in charge.

It’s so fucking easy to make you can get your kid to help make it. Stir, bitch, stir! What am I giving you pocket-money for?! (or something said in a warmer, friendlier way, with soothing parental type tones.)

All couscous recipes are great for saving time and being filling, but this one gives you more. The combination of juicy succulent oranges, cinnamon flavours, and the healthy spinach…They just work in some crazy harmony. An unexpected synergism happens. Like a bunch of criminals coming together for a succesful and well planned heist. Thug Kitchen has done it again. The flavours of cinnamon and orange go so well together. I mean it’s like Christmas, or Morocco, in a bowl. The vitamin C from the oranges help absorb the calcium in the spinach. Synergism bitches, synergism.

And the Thugs have created this dish just for us. Spectacular genius-bastards that they are. They smuggle good healthy shit into our bodies via our open mouths without us even realising what’s happening. We are so busy getting off on office gossip and the juicy oranges in the couscous, to realise we’ve just had two of our five a day, and a healthy dose of cinnamon that both regulates blood sugar and lowers cholesterol. (according to the voices inside my head and some unchecked sources on Google.)

It would also be easy to create a gluten-free version of this dish by subbing the couscous with quinoa. Less Morocco, more astronaut. (astronauts apparently bring quinoa into space because it’s nutrient dense: high in magnesium, phosphorus, iron, and potassium). (Google that shit if you don’t believe me.*)
